About Gado-Gado Padang
Gado-Gado Padang is a typical food of West Sumatra, Indonesia. Almost all regions in Indonesia have this dish with their own characteristics. The basic ingredients are almost the same, namely vegetables in the form of cabbage, lettuce, sprouts, plus boiled eggs, boiled potatoes, and peanut sauce. Gado-Gado Padang has its own characteristics, namely the slice of green chili and celery in the topping. This makes the aroma and tastes more delicious. Moreover, there is a sprinkling of red crackers which is also typical for this area.
Materials used in making Gado-Gado Padang:
4 medium sized potatoes, boiled and split into 8 parts
4 eggs, boiled and split into 4 parts
100 grams of bean sprouts, boiled
2 cucumbers, thin chopped.
250 grams of cabbage, finely sliced.
5 green chili seeds
2 celery sticks
Fried onions for sprinkles
Spices for Gado-Gado Padang sauce:
2 tablespoons of cooking oil
2 cm Galangal, curling
2 cm ginger, stir
1 lemongrass stick, spread
1 bay leaf
2 lime leaves.
200 ml of thick coconut milk
1 teaspoon of sugar
50 grams of brown sugar
Lime or tamarind according to taste.
Red chili that has been mashed and fried.
Salt to taste.
Spices that must be smoothed:
150 grams of fried peanuts.
5 red chili
3 pieces of cayenne pepper
2 cloves of garlic
Salt to taste
Steps for making Gado-Gado Padang Sauce :
Saute the shallot slices and finely ground spices. Add galangal, ginger, lemongrass, bay leaves, lime leaves to smell. Add the nut, coconut milk, and granulated sugar, brown sugar, lime or tamarind to mix well. Add water and salt, stir until blended. Cook using low heat until boiling.
Gado-Gado Peanut Sauce Padang is ready to be served.
How to serve Gado-Gado Padang:
Take a clean and dry dish.
Place pieces of potatoes, eggs, cabbage, sprouts, and cucumbers.
Add enough Peanut Sauce to cover the vegetables.
Sprinkle with sliced green chili, sliced celery, and fried shallots.
